Mood/Title: The Sweet Science of Chocolate
Today was a wonderfully engaging day at the Station Academy, marked by a fantastic turnout for Shania Shiras's lecture. As the Head of the Academy, seeing the classroom filled with citizens and slaves eager to learn is immensely rewarding.
Shania's class focused on the biology, chemistry, and culinary art behind Gorean chocolate. She captivated the room, detailing everything from the peculiar trunk-growing pods of the Cacao tree (Theobroma cacao) and their necessary fermentation, to the "Maillard reaction" that occurs during roasting. I must admit, I learned quite a bit myself—especially regarding the composition of various chocolates and how cocoa butter is sometimes replaced with cheaper seed oils by certain prominent (and unnamed!) merchants. Shania even provided samples for the class to enjoy, though Aidoneus cheekily made off with a good portion of them!
It was a joy to see my son, Asher, attend, and I made sure to publicly thank him for his work as a Builder in creating such a beautiful space for the Academy. It truly feels as though the Academy is establishing itself as a cornerstone of learning in Ar's Station.
